Oak over toffee. Is there such a thing? Well, here there is. Imagine smelling a stave sitting out in a yard, drying for a year, all those wood sugars ready to be charred and boom, a saw cuts through it clean. That smell, oh my, that smell is harmonious for a whiskey lover. Then, freshly made toffee: you’ve placed the almonds, chocolate and more goodness in a container and placed it in the refrigerator. That first time you open it, a woof of amazing toffee notes rise to the nose. Thus, oak over toffee. Otherwise known as heaven. On the palate, a meaty collection of baking spice, oil, pepper, chocolate and oak dominate. It finishes long and strong with a hint of salted chocolate.
