Springbank 21 year old single cask bottling is one of just 336 bottles exclusively available for Societe Dugas. Matured in an oloroso sherry hogshead. Springbank 21 Year Old has become something of a legend among whisky lovers and with good reason. It’s a spectacular dram that offers unbelievable complexity.

I think we can we can all agree that Springbank 21 Year Old is a grand whisky. An instant classic, so to speak. However, there are quite a few 21 years old single casks out there and this is one of those, bottled in 2016. It’s a young sherry cask for Symposion House of Taste, a whisky club in Malmö, Sweden.

Waxy nose! Stonefruit, a truckload of hay, toffee, overripe banana, sand and pebbles. Not necessarily in that order, but that is the nose of this malt in a nutshell. Actually it’s the best of two worlds: the typical, wonderful spirit of Springbank decorated with some dark and sweet notes of the oloroso cask. This smells absolutely delicious. This entertains me for at least fifteen minutes before I have the urge to take my first sip.

Tasting Note springbank 21 year old single cask

Nose: There is a lot going on here; heather, plums and peach, quite dry but with hints of honey. There’s a slight waxy note too with a little bit of leather.

Palate: Very soft, with caramelized fruit and raisins and cassis. The spices include cinnamon and vanilla and there’s some oaky dryness to balance the honey. A subtle wood smoke and a hint of the sea.

Finish: Very long with hints of aniseed and raisin sweetness.

Overall: Wow. there’s so much to take in… this is a whisky worth spending serious time with.
